Ingredients:

  • 3 large ripe plantains (mostly black with a few yellow spots)
  • 2 tablespoons vegetable oil (or coconut oil)
  • Pinch of salt (optional)
  • 1 tablespoon of butter (optional)

Instructions:

  1. Peel the plantains and slice them into 1-inch thick diagonal pieces.
  2. Heat the oil in a skillet over medium heat until shimmering.
  3. Carefully place the plantain slices in the hot oil, ensuring they aren't overcrowded. Cook for 3-4 minutes per side, until golden brown.
  4. Flip the plantains and cook for another 3-4 minutes, until the other side is also golden brown and caramelized.
  5. (Optional) Add butter in the final minutes and let it melt into the plantains.
  6. Remove the plantains from the skillet and place them on a plate lined with paper towels to drain excess oil.
  7. (Optional) Sprinkle with a pinch of salt.
  8. Serve warm and enjoy!
