Ingredients:
- 3 large ripe plantains (mostly black with a few yellow spots)
- 2 tablespoons vegetable oil (or coconut oil)
- Pinch of salt (optional)
- 1 tablespoon of butter (optional)
Instructions:
- Peel the plantains and slice them into 1-inch thick diagonal pieces.
- Heat the oil in a skillet over medium heat until shimmering.
- Carefully place the plantain slices in the hot oil, ensuring they aren't overcrowded. Cook for 3-4 minutes per side, until golden brown.
- Flip the plantains and cook for another 3-4 minutes, until the other side is also golden brown and caramelized.
- (Optional) Add butter in the final minutes and let it melt into the plantains.
- Remove the plantains from the skillet and place them on a plate lined with paper towels to drain excess oil.
- (Optional) Sprinkle with a pinch of salt.
- Serve warm and enjoy!
