Ingredients:
- 1/2 cup good quality mayonnaise (full-fat recommended)
- 2 tablespoons Dijon mustard
- 1 tablespoon Apple Cider Vinegar (or pickle juice)
- 1 teaspoon Honey or Maple Syrup
- 2 tablespoons Sweet Pickle Relish (finely chopped)
- 1/2 teaspoon Smoked Paprika
- 1/4 teaspoon Onion Powder
- 1/4 teaspoon Garlic Powder
- 1/4 teaspoon Freshly Ground Black Pepper
- Pinch of Salt (or to taste)
Instructions:
- Measure all ingredients. Place the mayonnaise, Dijon mustard, apple cider vinegar (or pickle juice), and honey/syrup into a small mixing bowl.
- Whisk the base ingredients vigorously until the mixture is completely smooth and uniform.
- Add the finely chopped pickle relish, smoked paprika, onion powder, garlic powder, and black pepper to the wet base.
- Gently fold the dry flavourings into the wet base using a spatula until just combined. Avoid overmixing.
- Taste the mixture. Adjust seasoning by adding a pinch of salt if necessary, or more vinegar for extra zing.
- For best flavour melding, cover the sauce and refrigerate for at least 15 minutes before using generously on your chicken sandwich.
