Ingredients:

  • 1/2 cup good quality mayonnaise (full-fat recommended)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Apple Cider Vinegar (or pickle juice)
  • 1 teaspoon Honey or Maple Syrup
  • 2 tablespoons Sweet Pickle Relish (finely chopped)
  • 1/2 teaspoon Smoked Paprika
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Freshly Ground Black Pepper
  • Pinch of Salt (or to taste)

Instructions:

  1. Measure all ingredients. Place the mayonnaise, Dijon mustard, apple cider vinegar (or pickle juice), and honey/syrup into a small mixing bowl.
  2. Whisk the base ingredients vigorously until the mixture is completely smooth and uniform.
  3. Add the finely chopped pickle relish, smoked paprika, onion powder, garlic powder, and black pepper to the wet base.
  4. Gently fold the dry flavourings into the wet base using a spatula until just combined. Avoid overmixing.
  5. Taste the mixture. Adjust seasoning by adding a pinch of salt if necessary, or more vinegar for extra zing.
  6. For best flavour melding, cover the sauce and refrigerate for at least 15 minutes before using generously on your chicken sandwich.
