Ingredients:
- 1 lb ground beef (80/20 lean-to-fat ratio)
- 1/4 cup pepperoni, finely minced
- 1 tsp dried oregano
- 1/2 tsp fennel seeds, crushed
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/2 cup marinara sauce
- 1 cup shredded low-moisture mozzarella cheese
- 8 slices large pepperoni
- 4 brioche burger buns
- 2 tbsp unsalted butter, softened
- 1/4 tsp garlic salt
Instructions:
- In a large bowl, gently combine the ground beef, minced pepperoni, oregano, crushed fennel, and garlic powder until just mixed.
- Divide the mixture into four 4-ounce portions and shape into patties slightly wider than the buns.
- Heat a cast iron skillet over medium-high heat. Sear patties for 4-5 minutes per side until a deep crust forms.
- Spread 1 tablespoon of marinara sauce over each patty, top with mozzarella cheese and 2 pepperoni slices.
- Cover the skillet for 1-2 minutes to melt the cheese or place under a broiler for 90 seconds until bubbling.
- Mix butter with garlic salt, spread on buns, and toast until golden brown before assembly.
