Ingredients:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1/4 cup pepperoni, finely minced
  • 1 tsp dried oregano
  • 1/2 tsp fennel seeds, crushed
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 cup marinara sauce
  • 1 cup shredded low-moisture mozzarella cheese
  • 8 slices large pepperoni
  • 4 brioche burger buns
  • 2 tbsp unsalted butter, softened
  • 1/4 tsp garlic salt

Instructions:

  1. In a large bowl, gently combine the ground beef, minced pepperoni, oregano, crushed fennel, and garlic powder until just mixed.
  2. Divide the mixture into four 4-ounce portions and shape into patties slightly wider than the buns.
  3. Heat a cast iron skillet over medium-high heat. Sear patties for 4-5 minutes per side until a deep crust forms.
  4. Spread 1 tablespoon of marinara sauce over each patty, top with mozzarella cheese and 2 pepperoni slices.
  5. Cover the skillet for 1-2 minutes to melt the cheese or place under a broiler for 90 seconds until bubbling.
  6. Mix butter with garlic salt, spread on buns, and toast until golden brown before assembly.
