Ingredients:
- 1/2 cup (80g) chia seeds
- 2 cups (480ml) unsweetened almond milk (or your choice of milk)
- 1/2 cup (120g) Greek yogurt (plain or flavored)
- 2 tablespoons (30ml) pure maple syrup or honey
- 1 teaspoon (5ml) pure vanilla extract
- Pinch of salt
- Fresh berries (strawberries, blueberries, raspberries)
- Sliced bananas
- Nuts or seeds (e.g., almonds, walnuts)
- Coconut flakes
- Granola
Instructions:
- In a mixing bowl, add chia seeds and salt.
- In a separate bowl, whisk together the almond milk, Greek yogurt, maple syrup (or honey), and vanilla extract until smooth.
- Pour the wet mixture into the bowl with chia seeds. Stir well to prevent clumping.
- Allow the mixture to rest for about 5 minutes, then stir again to ensure all seeds are well incorporated.
- Transfer the mixture to airtight containers or jars. Refrigerate for at least 30 minutes or preferably overnight to allow chia seeds to absorb the liquid and thicken.
- Once set, give the pudding a good stir. Top with fresh fruits, nuts, or seeds as desired, and enjoy!
