Ingredients:

  • 1/2 cup (80g) chia seeds
  • 2 cups (480ml) unsweetened almond milk (or your choice of milk)
  • 1/2 cup (120g) Greek yogurt (plain or flavored)
  • 2 tablespoons (30ml) pure maple syrup or honey
  • 1 teaspoon (5ml) pure vanilla extract
  • Pinch of salt
  • Fresh berries (strawberries, blueberries, raspberries)
  • Sliced bananas
  • Nuts or seeds (e.g., almonds, walnuts)
  • Coconut flakes
  • Granola

Instructions:

  1. In a mixing bowl, add chia seeds and salt.
  2. In a separate bowl, whisk together the almond milk, Greek yogurt, maple syrup (or honey), and vanilla extract until smooth.
  3. Pour the wet mixture into the bowl with chia seeds. Stir well to prevent clumping.
  4. Allow the mixture to rest for about 5 minutes, then stir again to ensure all seeds are well incorporated.
  5. Transfer the mixture to airtight containers or jars. Refrigerate for at least 30 minutes or preferably overnight to allow chia seeds to absorb the liquid and thicken.
  6. Once set, give the pudding a good stir. Top with fresh fruits, nuts, or seeds as desired, and enjoy!
