Ingredients:

  • 1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) paprika
  • Salt and pepper to taste
  • 1 cup (240 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 2 cups (200 g) shredded sharp cheddar cheese
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1 cup (150 g) frozen mixed vegetables (such as peas, carrots, and corn)
  • 1 tablespoon (15 ml) olive oil
  • Fresh parsley or chives, chopped (optional garnish)

Instructions:

  1. Season the chicken pieces with garlic powder, paprika, salt, and pepper.
  2. Heat olive oil in the skillet over medium-high heat. Add the seasoned chicken and sauté until golden brown (about 5-7 minutes).
  3. Reduce heat to medium; add chicken broth and heavy cream to the skillet. Stir well and bring to a simmer. Gradually whisk in the cheddar and Parmesan, stirring until melted and smooth.
  4. Stir in the frozen mixed vegetables and cook for an additional 5-7 minutes until heated through and tender.
  5. Adjust seasoning as needed, serve hot, and garnish with fresh herbs, if desired.
