Ingredients:

  • 8 slices whole grain or white bread
  • 1 cup cream cheese, softened
  • 4 tablespoons mint chutney
  • 1 medium cucumber, thinly sliced
  • 1 medium tomato, thinly sliced
  • Salt and pepper to taste
  • Fresh cilantro or mint leaves for garnish (optional)

Instructions:

  1. Use a knife to trim the crusts off the bread slices (optional). Lay 4 slices of bread on a cutting board.
  2. In a bowl, combine the softened cream cheese and mint chutney. Mix until well incorporated.
  3. Evenly spread the cream cheese mixture on each slice of bread. Layer with cucumber slices, followed by tomato slices. Season with salt and pepper.
  4. Place the remaining slices of bread on top to complete the sandwiches. Use a sharp knife to cut each sandwich into quarters or halves for bite-sized pieces.
  5. Arrange sandwiches on a serving platter, garnishing with fresh herbs if desired. Serve immediately or refrigerate until serving.
