Ingredients:
- 8 slices whole grain or white bread
- 1 cup cream cheese, softened
- 4 tablespoons mint chutney
- 1 medium cucumber, thinly sliced
- 1 medium tomato, thinly sliced
- Salt and pepper to taste
- Fresh cilantro or mint leaves for garnish (optional)
Instructions:
- Use a knife to trim the crusts off the bread slices (optional). Lay 4 slices of bread on a cutting board.
- In a bowl, combine the softened cream cheese and mint chutney. Mix until well incorporated.
- Evenly spread the cream cheese mixture on each slice of bread. Layer with cucumber slices, followed by tomato slices. Season with salt and pepper.
- Place the remaining slices of bread on top to complete the sandwiches. Use a sharp knife to cut each sandwich into quarters or halves for bite-sized pieces.
- Arrange sandwiches on a serving platter, garnishing with fresh herbs if desired. Serve immediately or refrigerate until serving.
