Quick & Easy Microwave Spaghetti Squash: A Nutritious Alternative

Ingredients

  • 1 medium spaghetti squash (about 3-4 pounds / 1.4-1.8 kg)
  • 1 tablespoon olive oil (15 ml)
  • Salt and pepper, to taste (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Cut the squash in half lengthwise using a sharp knife. Scoop out the seeds and central pulp with a spoon.
  2. Drizzle with olive oil and season with salt and pepper to taste.
  3. Place the squash halves cut-side down in a microwave-safe dish. Cover with a lid or plastic wrap, leaving a vent for steam to escape.
  4. Microwave on high for 10-15 minutes, checking for tenderness (should be fork-tender).
  5. Carefully remove the squash from the microwave (it will be hot). Use a fork to scrape the flesh into strands and serve as desired.
