Ingredients:
- 1 large red onion, thinly sliced (about 1 cup / 150 g)
- 1 medium cucumber, diced (about 1 cup / 150 g)
- 1 medium bell pepper (red, yellow, or green), diced (about 1 cup / 150 g)
- 1 cup cherry tomatoes, halved (150 g)
- 1 cup chopped fresh parsley (about 30 g)
- 2 tablespoons olive oil (30 ml)
- 1 tablespoon red wine vinegar (15 ml)
- 1 teaspoon lemon juice (5 ml)
- Salt and pepper, to taste
Instructions:
- Thinly slice the red onion and soak in cold water for 5 minutes to tame the sharpness.
- Dice the cucumber and bell pepper, and halve the cherry tomatoes.
- Chop the parsley.
- In a small mixing bowl, combine olive oil, red wine vinegar, lemon juice, salt, and pepper. Whisk together until emulsified.
- Drain the onions and add them to a large mixing bowl along with the cucumber, bell pepper, cherry tomatoes, and parsley.
- Pour the dressing over the vegetable mixture. Toss gently to combine and ensure even coating.
- Taste and adjust seasoning if necessary. Serve immediately or chill for 10 minutes for flavors to meld.
