Ingredients:

  • 1 large red onion, thinly sliced (about 1 cup / 150 g)
  • 1 medium cucumber, diced (about 1 cup / 150 g)
  • 1 medium bell pepper (red, yellow, or green), diced (about 1 cup / 150 g)
  • 1 cup cherry tomatoes, halved (150 g)
  • 1 cup chopped fresh parsley (about 30 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon red wine vinegar (15 ml)
  • 1 teaspoon lemon juice (5 ml)
  • Salt and pepper, to taste

Instructions:

  1. Thinly slice the red onion and soak in cold water for 5 minutes to tame the sharpness.
  2. Dice the cucumber and bell pepper, and halve the cherry tomatoes.
  3. Chop the parsley.
  4. In a small mixing bowl, combine olive oil, red wine vinegar, lemon juice, salt, and pepper. Whisk together until emulsified.
  5. Drain the onions and add them to a large mixing bowl along with the cucumber, bell pepper, cherry tomatoes, and parsley.
  6. Pour the dressing over the vegetable mixture. Toss gently to combine and ensure even coating.
  7. Taste and adjust seasoning if necessary. Serve immediately or chill for 10 minutes for flavors to meld.
