Ingredients:

  • 2 to 3 whole heads of garlic (800g - 1kg)
  • 2 tablespoons olive oil (30ml)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)

Instructions:

  1. Preheat your oven to 400°F (205°C).
  2. Slice off the top ¼ inch of each garlic head to expose the cloves and place them cut-side up in a baking dish.
  3. Drizzle with olive oil and sprinkle salt and pepper over the top.
  4. Tightly wrap each head in aluminum foil or cover the baking dish.
  5. Bake in the preheated oven for 40-60 minutes until cloves are soft and golden brown.
  6. Allow to cool slightly before handling.
  7. Use your fingers or a fork to squeeze the roasted garlic cloves from their skins.
  8. Enjoy warm or store in an airtight container in the refrigerator for up to 2 weeks.
