Ingredients:

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1-2 chipotle peppers in adobo sauce, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (optional for garnish)
  • Juice of 1 lime

Instructions:

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the chopped onion and sauté until translucent (about 5 minutes).
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the drained black beans to the skillet.
  5. Sprinkle in the chopped chipotle peppers, ground cumin, and smoked paprika.
  6. Stir well to combine all ingredients.
  7. Allow the mixture to cook for about 5-7 minutes, stirring occasionally.
  8. Taste and season with salt and pepper as needed.
  9. Remove from heat and squeeze fresh lime juice over the top.
  10. Garnish with chopped cilantro if using, and serve warm.
