Ingredients:
- 2 cans (15 oz each) black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1-2 chipotle peppers in adobo sauce, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped (optional for garnish)
- Juice of 1 lime
Instructions:
- Heat the olive oil in a medium skillet over medium heat.
- Add the chopped onion and sauté until translucent (about 5 minutes).
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the drained black beans to the skillet.
- Sprinkle in the chopped chipotle peppers, ground cumin, and smoked paprika.
- Stir well to combine all ingredients.
- Allow the mixture to cook for about 5-7 minutes, stirring occasionally.
- Taste and season with salt and pepper as needed.
- Remove from heat and squeeze fresh lime juice over the top.
- Garnish with chopped cilantro if using, and serve warm.
