Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 1 medium zucchini, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 2 cups baby spinach
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- Juice of 1 lemon
Instructions:
- Heat olive oil in a large pot over medium heat.
- Sauté chopped onion until translucent (about 3-5 minutes).
- Add minced garlic, sauté for 1 minute until fragrant.
- Stir in diced carrots, cook for 5 minutes until slightly softened.
- Add diced zucchini and bell pepper, sauté for another 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, add spinach, thyme, salt, and pepper, simmer for 10 minutes.
- Stir in lemon juice just before serving.
- Serve hot, garnished with additional herbs if desired.
