Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 medium zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 2 cups baby spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté chopped onion until translucent (about 3-5 minutes).
  3. Add minced garlic, sauté for 1 minute until fragrant.
  4. Stir in diced carrots, cook for 5 minutes until slightly softened.
  5. Add diced zucchini and bell pepper, sauté for another 5 minutes.
  6. Pour in vegetable broth and bring to a boil.
  7. Reduce heat, add spinach, thyme, salt, and pepper, simmer for 10 minutes.
  8. Stir in lemon juice just before serving.
  9. Serve hot, garnished with additional herbs if desired.
