Ingredients:

  • 4 medium zucchinis (approximately 1.5 lbs or 680 g)
  • 2 tablespoons olive oil (30 ml)
  • 1/2 teaspoon salt (2 g)
  • 1/4 teaspoon black pepper (1 g)
  • 1 tablespoon olive oil (15 ml)
  • 3 cloves garlic, minced
  • 1 can (14.5 oz or 400 g) crushed tomatoes
  • 1 teaspoon dried oregano (1 g)
  • 1/2 teaspoon red pepper flakes (optional, to taste) (1 g)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Wash and trim the ends of the zucchinis. Using a spiralizer or vegetable peeler, create zucchini noodles.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté minced garlic for 1-2 minutes until fragrant (do not brown).
  3. Add crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Stir to combine. Simmer for 5-7 minutes, allowing flavors to meld.
  4. In a separate skillet, heat 2 tablespoons olive oil over medium heat. Add zucchini noodles and sauté for 3-4 minutes until just tender. Season with salt and pepper.
  5. Toss sautéed zucchini noodles with the marinara sauce. Serve warm, garnished with fresh basil leaves.
