Ingredients:
- 4 medium zucchinis (approximately 1.5 lbs or 680 g)
- 2 tablespoons olive oil (30 ml)
- 1/2 teaspoon salt (2 g)
- 1/4 teaspoon black pepper (1 g)
- 1 tablespoon olive oil (15 ml)
- 3 cloves garlic, minced
- 1 can (14.5 oz or 400 g) crushed tomatoes
- 1 teaspoon dried oregano (1 g)
- 1/2 teaspoon red pepper flakes (optional, to taste) (1 g)
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
- Wash and trim the ends of the zucchinis. Using a spiralizer or vegetable peeler, create zucchini noodles.
- Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté minced garlic for 1-2 minutes until fragrant (do not brown).
- Add crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Stir to combine. Simmer for 5-7 minutes, allowing flavors to meld.
- In a separate skillet, heat 2 tablespoons olive oil over medium heat. Add zucchini noodles and sauté for 3-4 minutes until just tender. Season with salt and pepper.
- Toss sautéed zucchini noodles with the marinara sauce. Serve warm, garnished with fresh basil leaves.
