Ingredients:

  • 1 lb fresh asparagus spears
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 2 cloves minced garlic
  • 1 tbsp melted butter

Instructions:

  1. Line a large rimmed baking sheet with parchment paper. Trim the woody ends off the asparagus (about 1-2 inches). In a large bowl, toss the spears with olive oil, salt, and pepper until evenly coated.
  2. Spread the asparagus in a single layer on the baking sheet, ensuring they are not crowded. Roast in a preheated 400°F (200°C) oven for 10-12 minutes until the spears remain vibrant green and the tips just begin to brown.
  3. Remove the pan from the oven and quickly drizzle melted butter and minced garlic over the spears. Evenly distribute the mozzarella and Parmesan cheese on top.
  4. Return the pan to the oven under the broiler for 2-3 minutes until the cheese is bubbly and golden brown.
