Ingredients:
- 1 lb fresh asparagus spears
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- 2 cloves minced garlic
- 1 tbsp melted butter
Instructions:
- Line a large rimmed baking sheet with parchment paper. Trim the woody ends off the asparagus (about 1-2 inches). In a large bowl, toss the spears with olive oil, salt, and pepper until evenly coated.
- Spread the asparagus in a single layer on the baking sheet, ensuring they are not crowded. Roast in a preheated 400°F (200°C) oven for 10-12 minutes until the spears remain vibrant green and the tips just begin to brown.
- Remove the pan from the oven and quickly drizzle melted butter and minced garlic over the spears. Evenly distribute the mozzarella and Parmesan cheese on top.
- Return the pan to the oven under the broiler for 2-3 minutes until the cheese is bubbly and golden brown.
