Ingredients:

  • 4 medium artichokes (about 1 pound each or 450 grams)
  • 1 lemon, juice and zest
  • 3 tablespoons olive oil (45 mL)
  • 3 cloves garlic, minced
  • 1 teaspoon salt (5 g)
  • ½ teaspoon black pepper (2 g)
  • ½ cup breadcrumbs (60 g)
  • ½ cup grated Parmesan cheese (50 g)
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon dried oregano (1 g)

Instructions:

  1. Rinse artichokes under cold water.
  2. Cut off the top 1/3 of each artichoke.
  3. Remove the small, tough leaves from the base.
  4. Use a spoon to scoop out the fuzzy choke.
  5. In a bowl, mix lemon juice, lemon zest, olive oil, garlic, salt, and pepper.
  6. Brush the mixture over the prepared artichokes.
  7. Steam artichokes in a large pot for 10-15 minutes until tender but firm.
  8. Preheat oven to 375°F (190°C).
  9. In another bowl, combine breadcrumbs, Parmesan, parsley, and oregano.
  10. Place steamed artichokes, cut-side up, in the baking dish.
  11. Generously sprinkle the herb crust over each artichoke.
  12. Bake in the oven for 15-20 minutes until the topping is golden and crispy.
  13. Remove from the oven and serve warm, garnished with lemon wedges and parsley.
