Ingredients:
- 4 medium artichokes (about 1 pound each or 450 grams)
- 1 lemon, juice and zest
- 3 tablespoons olive oil (45 mL)
- 3 cloves garlic, minced
- 1 teaspoon salt (5 g)
- ½ teaspoon black pepper (2 g)
- ½ cup breadcrumbs (60 g)
- ½ cup grated Parmesan cheese (50 g)
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon dried oregano (1 g)
Instructions:
- Rinse artichokes under cold water.
- Cut off the top 1/3 of each artichoke.
- Remove the small, tough leaves from the base.
- Use a spoon to scoop out the fuzzy choke.
- In a bowl, mix lemon juice, lemon zest, olive oil, garlic, salt, and pepper.
- Brush the mixture over the prepared artichokes.
- Steam artichokes in a large pot for 10-15 minutes until tender but firm.
- Preheat oven to 375°F (190°C).
- In another bowl, combine breadcrumbs, Parmesan, parsley, and oregano.
- Place steamed artichokes, cut-side up, in the baking dish.
- Generously sprinkle the herb crust over each artichoke.
- Bake in the oven for 15-20 minutes until the topping is golden and crispy.
- Remove from the oven and serve warm, garnished with lemon wedges and parsley.
