Ingredients:
- 1/4 cup olive oil
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 pound chicken breast, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 medium zucchini, sliced into rounds
- 1 small red onion, cut into quarters
- Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)
Instructions:
- In a mixing bowl, combine olive oil, soy sauce, honey, garlic powder, and black pepper. Whisk until well blended.
- Add the chicken cubes to the bowl, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
- While the chicken marinates, preheat your grill or grill pan over medium-high heat.
- Thread marinated chicken, bell peppers, zucchini, and red onion alternately onto skewers.
- Place skewers on the grill and cook for 10-15 minutes, turning occasionally until chicken is cooked through and vegetables are tender and slightly charred.
- Remove skewers from the grill. Serve warm, optionally garnished with fresh herbs.
