Ingredients:

  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 pound chicken breast, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 medium zucchini, sliced into rounds
  • 1 small red onion, cut into quarters
  • Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

Instructions:

  1. In a mixing bowl, combine olive oil, soy sauce, honey, garlic powder, and black pepper. Whisk until well blended.
  2. Add the chicken cubes to the bowl, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  3. While the chicken marinates, preheat your grill or grill pan over medium-high heat.
  4. Thread marinated chicken, bell peppers, zucchini, and red onion alternately onto skewers.
  5. Place skewers on the grill and cook for 10-15 minutes, turning occasionally until chicken is cooked through and vegetables are tender and slightly charred.
  6. Remove skewers from the grill. Serve warm, optionally garnished with fresh herbs.
