Ingredients:

  • ½ cup dry white wine (120 ml)
  • 1 tablespoon rice vinegar (15 ml)
  • ½ cup white wine or sherry (120 ml)
  • 2 tablespoons sugar (25 g)
  • ½ cup vegetable broth (120 ml)
  • 1 tablespoon apple cider vinegar (15 ml)
  • 1 teaspoon soy sauce (5 ml) (optional)

Instructions:

  1. Measure ½ cup of dry white wine and add 1 tablespoon of rice vinegar; mix well.
  2. Measure ½ cup of white wine or sherry; stir in 2 tablespoons of sugar until dissolved.
  3. Combine ½ cup of vegetable broth with 1 tablespoon of apple cider vinegar.
  4. For enhanced umami, add 1 teaspoon of soy sauce to any of the mixtures.
