Ingredients:
- 1 cup (100g) cracked oats
- 2 cups (480ml) water or vegetable broth
- 1/2 teaspoon salt
- 2 large eggs
- 2 cups (60g) fresh spinach or mixed greens
- 1 tablespoon (15ml) olive oil
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup (30g) grated Parmesan cheese (or nutritional yeast for a vegan option)
- Salt and pepper to taste
Instructions:
- In a medium saucepan, combine cracked oats, water (or broth), and salt.
- Bring to a boil over medium heat, then reduce to a simmer.
- Stir occasionally for about 10 minutes, or until oats are tender and creamy.
- While oats are cooking, heat olive oil in a skillet over medium heat.
- Add spinach or mixed greens and red pepper flakes.
- Sauté until wilted, about 2-3 minutes. Season with salt and pepper.
- Fill the poaching pan with water and bring to a gentle simmer.
- Crack an egg into a bowl. Create a gentle whirlpool in the water and slide in the egg.
- Poach for 3-4 minutes until the whites are set, and yolk remains runny. Repeat for the second egg.
- Divide cracked oats between two bowls.
- Top each bowl with sautéed greens and a poached egg.
- Sprinkle with Parmesan cheese and additional salt and pepper if desired.
