Ingredients:

  • 1 cup (100g) cracked oats
  • 2 cups (480ml) water or vegetable broth
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 cups (60g) fresh spinach or mixed greens
  • 1 tablespoon (15ml) olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup (30g) grated Parmesan cheese (or nutritional yeast for a vegan option)
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine cracked oats, water (or broth), and salt.
  2. Bring to a boil over medium heat, then reduce to a simmer.
  3. Stir occasionally for about 10 minutes, or until oats are tender and creamy.
  4. While oats are cooking, heat olive oil in a skillet over medium heat.
  5. Add spinach or mixed greens and red pepper flakes.
  6. Sauté until wilted, about 2-3 minutes. Season with salt and pepper.
  7. Fill the poaching pan with water and bring to a gentle simmer.
  8. Crack an egg into a bowl. Create a gentle whirlpool in the water and slide in the egg.
  9. Poach for 3-4 minutes until the whites are set, and yolk remains runny. Repeat for the second egg.
  10. Divide cracked oats between two bowls.
  11. Top each bowl with sautéed greens and a poached egg.
  12. Sprinkle with Parmesan cheese and additional salt and pepper if desired.
