- 1 tablespoon sesame oil (or vegetable oil)
- 1 cup shredded carrots
- 4 cups coleslaw mix (or finely chopped green cabbage)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 green onions, sliced
- Sesame seeds (optional)
Instructions:
- Preheat a large skillet or wok over medium heat.
- Add sesame oil to the skillet and heat until shimmering.
- Sauté ground pork until browned, breaking it apart with a spatula, about 5 minutes; drain excess fat if necessary.
- Add minced garlic and ginger, cooking until fragrant (about 1 minute).
- Stir in the shredded carrots and coleslaw mix and cook until vegetables are tender, about 3-5 minutes.
- Mix in soy sauce, rice vinegar, sugar, salt, and pepper; stir well and cook for an additional 2-3 minutes.
- Taste and adjust seasoning as necessary.
- Serve hot, garnished with green onions and sesame seeds.
