  • 1 tablespoon sesame oil (or vegetable oil)
  • 1 cup shredded carrots
  • 4 cups coleslaw mix (or finely chopped green cabbage)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 green onions, sliced
  • Sesame seeds (optional)

Instructions:

  1. Preheat a large skillet or wok over medium heat.
  2. Add sesame oil to the skillet and heat until shimmering.
  3. Sauté ground pork until browned, breaking it apart with a spatula, about 5 minutes; drain excess fat if necessary.
  4. Add minced garlic and ginger, cooking until fragrant (about 1 minute).
  5. Stir in the shredded carrots and coleslaw mix and cook until vegetables are tender, about 3-5 minutes.
  6. Mix in soy sauce, rice vinegar, sugar, salt, and pepper; stir well and cook for an additional 2-3 minutes.
  7. Taste and adjust seasoning as necessary.
  8. Serve hot, garnished with green onions and sesame seeds.
