Ingredients:

- 1 cup dried pinto beans
- 4 cups water
- 1 bay leaf (optional)
Instructions:
- Rinse and sort the beans to remove any debris.
- Soak the beans overnight or use the quick-soak method (boiling, then resting for an hour).
- Drain and rinse the beans again.
- In a pot, combine soaked beans, water, and bay leaf.
- Bring to a boil, then reduce to low heat and simmer until tender (about 1-1.5 hours).
- In a mixing bowl, combine the ground cumin, smoked paprika, garlic powder, onion powder, dried oregano, chili powder, salt, and black pepper.
- Mix well until all spices are evenly incorporated.
- Once beans are cooked, drain excess liquid if necessary.
- Stir in the seasoning blend, mixing well to coat the beans.
- Taste and adjust salt or spices as needed. Serve warm.
