Ingredients:

  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup dried pinto beans
  • 4 cups water
  • 1 bay leaf (optional)

Instructions:

  1. Rinse and sort the beans to remove any debris.
  2. Soak the beans overnight or use the quick-soak method (boiling, then resting for an hour).
  3. Drain and rinse the beans again.
  4. In a pot, combine soaked beans, water, and bay leaf.
  5. Bring to a boil, then reduce to low heat and simmer until tender (about 1-1.5 hours).
  6. In a mixing bowl, combine the ground cumin, smoked paprika, garlic powder, onion powder, dried oregano, chili powder, salt, and black pepper.
  7. Mix well until all spices are evenly incorporated.
  8. Once beans are cooked, drain excess liquid if necessary.
  9. Stir in the seasoning blend, mixing well to coat the beans.
  10. Taste and adjust salt or spices as needed. Serve warm.
