Ingredients:

  • 4 medium zucchinis, sliced into 1/4-inch rounds

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and slice the zucchinis into 1/4-inch rounds.
  3. In a large bowl, combine olive oil, minced garlic, salt, pepper, and dried herbs.
  4. Add zucchini rounds to the bowl and toss until evenly coated with the herb mixture.
  5. Spread the zucchini in a single layer on a prepared baking sheet.
  6. Roast in the preheated oven for 20-25 minutes or until golden brown and tender.
  7. Remove from the oven and serve immediately or allow to cool slightly before serving.
