Ingredients:

  • 1 lb fresh spinach, or 16 oz frozen spinach, thawed and drained
  • 1 cup feta cheese, crumbled
  • ½ cup ricotta cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tbsp olive oil
  • 1 tsp dried dill
  • Salt and pepper to taste
  • 1 package of phyllo dough, thawed
  • ½ cup unsalted butter, melted

Instructions:

  1. Sauté onion in olive oil until translucent.
  2. Add garlic, cooking briefly until fragrant.
  3. Stir in spinach and cook until wilted (if fresh).
  4. Remove from heat and add feta, ricotta, egg, dill, salt, and pepper. Mix well.
  5. Preheat the oven to 350°F (175°C).
  6. Unroll phyllo dough and cover with a damp towel to prevent drying.
  7. Brush a layer of phyllo with melted butter, adding 3-4 layers, brushing each.
  8. Spoon filling onto the phyllo layers and spread evenly.
  9. Layer additional phyllo on top of the filling, brushing each layer with butter.
  10. Tuck the edges in and cut the top layer into squares or triangles.
  11. Bake in the preheated oven for 25-30 minutes until golden brown.
  12. Cool slightly before slicing and serving warm.
