Ingredients:
- 1 lb fresh spinach, or 16 oz frozen spinach, thawed and drained
- 1 cup feta cheese, crumbled
- ½ cup ricotta cheese
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 2 tbsp olive oil
- 1 tsp dried dill
- Salt and pepper to taste
- 1 package of phyllo dough, thawed
- ½ cup unsalted butter, melted
Instructions:
- Sauté onion in olive oil until translucent.
- Add garlic, cooking briefly until fragrant.
- Stir in spinach and cook until wilted (if fresh).
- Remove from heat and add feta, ricotta, egg, dill, salt, and pepper. Mix well.
- Preheat the oven to 350°F (175°C).
- Unroll phyllo dough and cover with a damp towel to prevent drying.
- Brush a layer of phyllo with melted butter, adding 3-4 layers, brushing each.
- Spoon filling onto the phyllo layers and spread evenly.
- Layer additional phyllo on top of the filling, brushing each layer with butter.
- Tuck the edges in and cut the top layer into squares or triangles.
- Bake in the preheated oven for 25-30 minutes until golden brown.
- Cool slightly before slicing and serving warm.
