Ingredients:
- 1 cup (200g) sugar
- 1/2 cup (120ml) water
- 1/4 teaspoon saffron strands
- 1/4 teaspoon cardamom powder
- 1 tablespoon lemon juice
- 1 cup (240ml) cold milk (whole or plant-based)
- 1/2 cup (120g) vanilla ice cream
- 1/4 cup (60ml) whipped cream (for topping)
- Crushed jalebi pieces (for garnish)
- 2 tablespoons chopped pistachios (optional)
- Fresh mint leaves (for garnish)
Instructions:
- Combine sugar and water in a saucepan; heat over medium until dissolved.
- Stir in saffron, cardamom, and lemon juice; simmer for 2-3 minutes until slightly thickened. Remove from heat and cool.
- In a blender, combine cooled jalebi syrup (reserve some for garnish), cold milk, and vanilla ice cream.
- Blend on high until smooth and creamy.
- Pour the mixture into serving glasses.
- Top with whipped cream and drizzle with reserved jalebi syrup.
- Garnish with crushed jalebi pieces and chopped pistachios.
