Ingredients:

  • 1 cup (200g) sugar
  • 1/2 cup (120ml) water
  • 1/4 teaspoon saffron strands
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon lemon juice
  • 1 cup (240ml) cold milk (whole or plant-based)
  • 1/2 cup (120g) vanilla ice cream
  • 1/4 cup (60ml) whipped cream (for topping)
  • Crushed jalebi pieces (for garnish)
  • 2 tablespoons chopped pistachios (optional)
  • Fresh mint leaves (for garnish)

Instructions:

  1. Combine sugar and water in a saucepan; heat over medium until dissolved.
  2. Stir in saffron, cardamom, and lemon juice; simmer for 2-3 minutes until slightly thickened. Remove from heat and cool.
  3. In a blender, combine cooled jalebi syrup (reserve some for garnish), cold milk, and vanilla ice cream.
  4. Blend on high until smooth and creamy.
  5. Pour the mixture into serving glasses.
  6. Top with whipped cream and drizzle with reserved jalebi syrup.
  7. Garnish with crushed jalebi pieces and chopped pistachios.
