Ingredients:

  • 1 lb smoked kielbasa or italian sausage, sliced into 1/2-inch rounds
  • 1 lb baby potatoes, quartered
  • 2 medium bell peppers (red and yellow), chopped into 1-inch pieces
  • 1 medium red onion, wedged
  • 1 medium zucchini, sliced into thick half-moons
  • 1 cup broccoli florets
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Line your large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. In a large mixing bowl, combine the sliced sausage, quartered potatoes, peppers, onion, zucchini, and broccoli.
  3. Drizzle the olive oil over the mixture. Add minced garlic, oregano, smoked paprika, salt, and pepper.
  4. Toss thoroughly using your hands or tongs until every piece of vegetable and sausage is glossy and evenly coated in spices.
  5. Spread the mixture across the prepared sheet pan in a single layer. Ensure there is a small amount of space between the ingredients.
  6. Roast for 25–30 minutes. Halfway through (around the 15-minute mark), use a spatula to toss the ingredients.
  7. Remove from the oven when the potatoes are fork-tender and the sausage has developed a mahogany-colored sear.
