Ingredients:
- 1 lb smoked kielbasa or italian sausage, sliced into 1/2-inch rounds
- 1 lb baby potatoes, quartered
- 2 medium bell peppers (red and yellow), chopped into 1-inch pieces
- 1 medium red onion, wedged
- 1 medium zucchini, sliced into thick half-moons
- 1 cup broccoli florets
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Line your large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
- In a large mixing bowl, combine the sliced sausage, quartered potatoes, peppers, onion, zucchini, and broccoli.
- Drizzle the olive oil over the mixture. Add minced garlic, oregano, smoked paprika, salt, and pepper.
- Toss thoroughly using your hands or tongs until every piece of vegetable and sausage is glossy and evenly coated in spices.
- Spread the mixture across the prepared sheet pan in a single layer. Ensure there is a small amount of space between the ingredients.
- Roast for 25–30 minutes. Halfway through (around the 15-minute mark), use a spatula to toss the ingredients.
- Remove from the oven when the potatoes are fork-tender and the sausage has developed a mahogany-colored sear.
