Ingredients:

  • 2 oz Empress 1908 Gin
  • 0.5 oz Elderflower Liqueur
  • 0.75 oz freshly squeezed lemon juice
  • 0.5 oz Lavender or Thyme-infused simple syrup
  • 2 dashes orange bitters
  • 1 large egg white

Instructions:

  1. The Dry Shake Emulsification: Combine the gin, elderflower liqueur, lemon juice, herb syrup, bitters, and egg white in your shaker. Do not add ice yet. Shake vigorously for a full 30 seconds until the foam builds and the sound of the liquid becomes muffled.
  2. The Chilled Aeration: Add a generous handful of large clear ice to the shaker. Shake again for 15-20 seconds until the outside of the shaker feels painfully cold, setting the foam and chilling the liquid.
  3. The Fine-Strained Pour: Double strain the mixture through a Hawthorne and fine mesh strainer into a chilled coupe or Nick & Nora glass to ensure a silky texture without ice shards.
