Ingredients:

  • 2 medium ripe bananas (about 240g)
  • 1/3 cup (75g) unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (75g) walnuts or pecans, chopped (optional)
  • 1/2 cup (90g) chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the melted butter until well combined.
  4. Mix in the granulated sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and stir until incorporated.
  6. Gently fold in the flour until just combined.
  7. If using, fold in the chopped walnuts, pecans, or chocolate chips.
  8. Pour the batter into a greased loaf pan (or lined with parchment).
  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a cooling rack to cool completely.
