Ingredients:

  • 1 1/2 cups (190g) all-purpose flour, plus extra for dusting
  • 1/2 teaspoon (3g) salt
  • 1/2 cup (1 stick/113g) unsalted butter, very cold and cut into cubes
  • 1/4 cup (60ml) ice water
  • 6 medium apples (about 1.5 lbs / 680g), such as Granny Smith, Honeycrisp, or a mix
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons apricot jam, for glazing (optional)

Instructions:

  1. Combine flour and salt in a food processor or bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough just comes together. Form into a disc, wrap in plastic, and chill for at least 1 hour.
  2. Peel, core, and thinly slice the apples. Toss with sugar, melted butter, lemon juice, cinnamon, and nutmeg.
  3. On a lightly floured surface, roll out the chilled dough into a circle slightly larger than your tart pan.
  4. Gently transfer the dough to the tart pan, pressing it into the bottom and up the sides. Trim any excess dough and crimp the edges for a decorative finish.
  5. Arrange the apple slices in a circular pattern in the tart shell, overlapping slightly.
  6. Bake in a preheated oven at 375°F (190°C) for 45-55 minutes, or until the crust is golden brown and the apples are tender.
  7. While the tart is still warm, brush the surface with melted apricot jam for a glossy finish (optional).
  8. Let the tart cool slightly before removing it from the pan. Serve warm or at room temperature. This delicious apple tart is ready to be served.
