Ingredients:
- 1 medium peach, peeled and diced (150g)
- 1 tbsp brown sugar, packed (12g)
- 1/2 tsp cornstarch (2g)
- 1/4 tsp ground cinnamon (1g)
- 1 tsp lemon juice (5ml)
- 2 tbsp all-purpose flour (15g)
- 2 tbsp rolled oats (20g)
- 1 tbsp brown sugar (12g)
- 1 tbsp unsalted butter, cold and cubed (14g)
- 0.5g salt
Instructions:
- Preheat your oven to 375°F (190°C). In a small bowl, toss the diced peaches with brown sugar, cornstarch, cinnamon, and lemon juice until the fruit is evenly coated. Pour the mixture into the bottom of a 6 oz oven-safe ramekin.
- In the same bowl, combine the flour, oats, brown sugar, and salt. Add the cold, cubed butter and use a fork to press the butter into the dry ingredients until the mixture resembles coarse sand with pea-sized lumps.
- Sprinkle the crumble mixture evenly over the peaches. Bake for 20 minutes until the peach juices are bubbling around the edges and the topping is a deep mahogany-gold color.
