Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp cracked black pepper
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) whole kernel corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 lb frozen tater tots
- 2 cups shredded sharp cheddar cheese
- 1/2 cup sliced green onions
Instructions:
- Heat the olive oil in a skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula.
- Sprinkle in the smoked paprika, garlic powder, salt, and pepper. Cook until the beef is mahogany-colored and no longer pink, then drain excess fat.
- Transfer the browned beef to the bottom of the slow cooker.
- In a separate bowl, stir together the black beans, corn, diced tomatoes, beef broth, and Worcestershire sauce. Pour this mixture evenly over the beef.
- Cover the slow cooker with the lid. Set to Low for 6 hours or High for 3 hours.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top.
- Arrange the frozen tater tots in a neat, single layer over the cheese. Cover and cook for the final 30 minutes.
- Garnish with sliced green onions before serving.
