Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 lb frozen tater tots
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sliced green onions

Instructions:

  1. Heat the olive oil in a skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula.
  2. Sprinkle in the smoked paprika, garlic powder, salt, and pepper. Cook until the beef is mahogany-colored and no longer pink, then drain excess fat.
  3. Transfer the browned beef to the bottom of the slow cooker.
  4. In a separate bowl, stir together the black beans, corn, diced tomatoes, beef broth, and Worcestershire sauce. Pour this mixture evenly over the beef.
  5. Cover the slow cooker with the lid. Set to Low for 6 hours or High for 3 hours.
  6. About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top.
  7. Arrange the frozen tater tots in a neat, single layer over the cheese. Cover and cook for the final 30 minutes.
  8. Garnish with sliced green onions before serving.
