Ingredients:

  • 1 ½ cups (192g) all-purpose flour
  • 2 tablespoons (24g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups (360ml) sour cream
  • 1 large egg
  • 1 cup (240ml) milk
  • 2 tablespoons (30ml) unsalted butter, melted, plus more for greasing the griddle
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the sour cream, egg, milk, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Be careful not to overmix! A few lumps are okay.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat. A drop of water should sizzle gently when it hits the surface.
  5. Pour ¼ cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and bubbles start to form and pop on the surface. Flip carefully with a spatula.
  6. Serve the pancakes immediately with your favorite toppings.
