Ingredients:
- 1 ½ cups (192g) all-purpose flour
- 2 tablespoons (24g) granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups (360ml) sour cream
- 1 large egg
- 1 cup (240ml) milk
- 2 tablespoons (30ml) unsalted butter, melted, plus more for greasing the griddle
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the sour cream, egg, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Be careful not to overmix! A few lumps are okay.
- Heat a lightly oiled griddle or non-stick pan over medium heat. A drop of water should sizzle gently when it hits the surface.
- Pour ¼ cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and bubbles start to form and pop on the surface. Flip carefully with a spatula.
- Serve the pancakes immediately with your favorite toppings.
