Ingredients:
- 1 tablespoon olive oil (15 ml)
- 2 cloves garlic, minced (approx. 6g)
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry (283g)
- 1 (14-ounce) can artichoke hearts, drained and chopped (397g)
- 1 cup mayonnaise (240 ml)
- 1 cup sour cream (240 ml)
- 1/2 cup grated Parmesan cheese (50g)
- 1/2 cup grated mozzarella cheese (50g)
- 1/4 teaspoon red pepper flakes (optional, for a little kick) (1g)
- Salt and freshly ground black pepper to taste (approx. 2-3g of each)
Instructions:
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Be careful not to burn it!
- In a large bowl, combine sautéed garlic, spinach (squeezed dry!), chopped artichoke hearts, mayonnaise, sour cream, Parmesan cheese, mozzarella cheese, and red pepper flakes (if using). Season with salt and pepper to taste.
- Transfer the mixture to a greased 9-inch baking dish (or oven-safe skillet).
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until golden brown and bubbly.
