Ingredients:
- 2 cups fresh corn kernels (or 1 can of sweet corn, drained)
- 1 cup all-purpose flour
- 1/2 cup coconut sugar or brown sugar
- 1/2 cup coconut milk
- 2 tablespoons vegetable oil
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup shredded unsweetened coconut
- 1 teaspoon vanilla extract (optional)
Instructions:
- Fill the steamer pot with water and ensure its ready to boil.
- In a blender or food processor, blend the fresh corn or canned corn until smooth.
- In a mixing bowl, combine flour, baking powder, coconut sugar, and salt. Whisk to combine.
- In a separate bowl, mix the blended corn, coconut milk, vegetable oil, and vanilla extract (if using).
- Gradually add the wet mixture to the dry ingredients, stirring until combined. Fold in shredded coconut.
- Lightly grease muffin tins or ramekins and pour the batter into them, filling each about 3/4 full.
- Place the filled muffin tins or ramekins in the steaming basket and cover. Steam for 35-45 minutes until a toothpick comes out clean.
- Allow to cool for a few minutes before removing from the tins. Serve warm or at room temperature.
