Ingredients:

  • 2 cups fresh corn kernels (or 1 can of sweet corn, drained)
  • 1 cup all-purpose flour
  • 1/2 cup coconut sugar or brown sugar
  • 1/2 cup coconut milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup shredded unsweetened coconut
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. Fill the steamer pot with water and ensure its ready to boil.
  2. In a blender or food processor, blend the fresh corn or canned corn until smooth.
  3. In a mixing bowl, combine flour, baking powder, coconut sugar, and salt. Whisk to combine.
  4. In a separate bowl, mix the blended corn, coconut milk, vegetable oil, and vanilla extract (if using).
  5. Gradually add the wet mixture to the dry ingredients, stirring until combined. Fold in shredded coconut.
  6. Lightly grease muffin tins or ramekins and pour the batter into them, filling each about 3/4 full.
  7. Place the filled muffin tins or ramekins in the steaming basket and cover. Steam for 35-45 minutes until a toothpick comes out clean.
  8. Allow to cool for a few minutes before removing from the tins. Serve warm or at room temperature.
