  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ cup (75g) shredded cheese (e.g., cotija or mozzarella) (optional)
  • ½ teaspoon chili powder (optional)
  • Fresh herbs (e.g., cilantro or green onion), chopped (optional)

Instructions:

  1. In a food processor, blend fresh corn until slightly chunky.
  2. In a mixing bowl, combine masa harina, baking powder, and salt.
  3. Add blended corn, warm water, and olive oil to dry ingredients.
  4. Mix until a smooth, pliable dough forms.
  5. In a small bowl, combine cheese and herbs or spices if using.
  6. Take a portion of dough and flatten it in your hand.
  7. Add a spoonful of optional filling in the center and encase with dough.
  8. Shape into a round ball and set on a plate.
  9. Arrange the shaped bollos in a steamer basket.
  10. Fill the pot with water (not touching the bollos) and cover.
  11. Steam for 25-30 minutes or until cooked through and fluffy.
  12. Remove from the steamer and let cool slightly before serving.
