- 2 tablespoons (30ml) olive oil
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ cup (75g) shredded cheese (e.g., cotija or mozzarella) (optional)
- ½ teaspoon chili powder (optional)
- Fresh herbs (e.g., cilantro or green onion), chopped (optional)
Instructions:
- In a food processor, blend fresh corn until slightly chunky.
- In a mixing bowl, combine masa harina, baking powder, and salt.
- Add blended corn, warm water, and olive oil to dry ingredients.
- Mix until a smooth, pliable dough forms.
- In a small bowl, combine cheese and herbs or spices if using.
- Take a portion of dough and flatten it in your hand.
- Add a spoonful of optional filling in the center and encase with dough.
- Shape into a round ball and set on a plate.
- Arrange the shaped bollos in a steamer basket.
- Fill the pot with water (not touching the bollos) and cover.
- Steam for 25-30 minutes or until cooked through and fluffy.
- Remove from the steamer and let cool slightly before serving.
