Ingredients:
- 1 pound (450g) ground beef or turkey
- 1 cup (150g) cooked rice or quinoa
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 large bell peppers (any color)
- 1 cup (100g) shredded cheese (such as cheddar or mozzarella)
- Fresh parsley or cilantro, chopped (optional)
- Sour cream or Greek yogurt (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
- In a skillet, brown the ground meat over medium heat until cooked through. Drain excess fat.
- Add diced onion and garlic, sauté until softened (about 3-4 minutes).
- Stir in diced tomatoes, rice/quinoa, oregano, paprika, salt, and pepper. Cook for another 5 minutes.
- Spoon the filling into each pepper, packing it tightly.
- Sprinkle shredded cheese over the filled peppers.
- Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake an additional 10 minutes until cheese is bubbly and golden.
- Garnish with fresh herbs if desired and enjoy!
