Ingredients:

  • 1 pound (450g) ground beef or turkey
  • 1 cup (150g) cooked rice or quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 large bell peppers (any color)
  • 1 cup (100g) shredded cheese (such as cheddar or mozzarella)
  • Fresh parsley or cilantro, chopped (optional)
  • Sour cream or Greek yogurt (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  3. In a skillet, brown the ground meat over medium heat until cooked through. Drain excess fat.
  4. Add diced onion and garlic, sauté until softened (about 3-4 minutes).
  5. Stir in diced tomatoes, rice/quinoa, oregano, paprika, salt, and pepper. Cook for another 5 minutes.
  6. Spoon the filling into each pepper, packing it tightly.
  7. Sprinkle shredded cheese over the filled peppers.
  8. Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake an additional 10 minutes until cheese is bubbly and golden.
  9. Garnish with fresh herbs if desired and enjoy!
