  • 1 teaspoon grated ginger
  • 1 lb chicken breast, cubed (or tofu for a vegetarian option)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (such as bell peppers, broccoli, and snap peas)
  • 2 green onions, chopped (for garnish)
  • Cooked rice or noodles, to serve

Instructions:

  1. In a mixing bowl, combine white wine, rice vinegar, mirin (or honey), and ginger. Whisk until uniform.
  2. Place the cubed chicken or tofu in the marinade. Cover and let it sit for at least 10 minutes.
  3. Heat sesame oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  4. Increase heat and add the marinated chicken or tofu, cooking until golden brown (about 5-7 minutes).
  5. Stir in mixed vegetables and soy sauce. Cook for an additional 5-7 minutes until vegetables are tender yet crisp.
  6. Remove from heat, garnish with green onions, and serve hot over rice or noodles.
