- 1 lb chicken breast, cubed (or tofu for a vegetarian option)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 cup mixed vegetables (such as bell peppers, broccoli, and snap peas)
- 2 green onions, chopped (for garnish)
- Cooked rice or noodles, to serve
Instructions:
- In a mixing bowl, combine white wine, rice vinegar, mirin (or honey), and ginger. Whisk until uniform.
- Place the cubed chicken or tofu in the marinade. Cover and let it sit for at least 10 minutes.
- Heat sesame oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
- Increase heat and add the marinated chicken or tofu, cooking until golden brown (about 5-7 minutes).
- Stir in mixed vegetables and soy sauce. Cook for an additional 5-7 minutes until vegetables are tender yet crisp.
- Remove from heat, garnish with green onions, and serve hot over rice or noodles.
