Ingredients:

  • 1 1/2 cups (150g) graham cracker crumbs
  • 5 tablespoons (70g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar
  • 1 (14 ounce) can (397g) sweetened condensed milk
  • 1/2 cup (120ml) fresh lime juice
  • 4 large egg yolks
  • 1 teaspoon lime zest
  • Pinch of salt
  • Whipped cream (optional)
  • Lime slices (optional)
  • Lime zest (optional)

Instructions:

  1. Prepare the Crust (if not using pre-made): Combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom and up the sides of the pie plate. Bake for 8-10 minutes until lightly golden. Let cool completely.
  2. Make the Filling: Whisk together sweetened condensed milk, lime juice, egg yolks, lime zest, and salt until smooth and fully combined.
  3. Pour and Bake: Pour the filling into the prepared crust. Bake in a preheated oven until the filling is set but still slightly jiggly in the center (about 15-20 minutes).
  4. Cool and Chill: Let the pie cool completely at room temperature. Then, refrigerate for at least 1 hour before serving (preferably longer for best texture).
  5. Garnish and Serve: Garnish with whipped cream, lime slices, and/or lime zest, if desired. Slice and serve chilled.
