Ingredients:

  • 4 ripe plantains (yellow with black spots), peeled (US: About 1.5 - 2 lbs, Metric: 680 - 900g)
  • 1/4 teaspoon salt (US: 1/4 tsp, Metric: 1.5 ml)
  • 1 cup vegetable oil (or coconut oil) (US: 8 fl oz, Metric: 240 ml)

Instructions:

  1. Peel the plantains and slice them diagonally, about 1/2 inch thick.
  2. Heat oil in a skillet over medium-high heat. (Oil should shimmer but not smoke)
  3. Carefully add plantain slices in a single layer. (Avoid overcrowding)
  4. Fry for 2-3 minutes per side, until golden brown and caramelized. (Watch for colour)
  5. Remove with a slotted spoon and drain on paper towels. (Remove excess oil)
  6. Sprinkle with salt. (While still hot)
