Ingredients:
- 8 tablespoons (1 stick) unsalted butter, softened (113g)
- 4 ounces cream cheese, softened (113g)
- ¾ cup granulated sugar (150g)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour (240g)
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup granulated sugar (50g) (optional coating)
Instructions:
- In a large bowl, cream together the softened butter and cream cheese until light and fluffy.
- Gradually add the sugar and beat until well combined. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour (or up to 24 hours).
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats.
- Roll the chilled dough into 1-inch balls. If desired, roll each ball in the extra sugar.
- Place the cookies on the prepared baking sheets, leaving about 2 inches between each cookie. Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
