Ingredients:

  • 2 (28 ounce) cans whole peeled tomatoes, undrained
  • 1/2 medium white onion, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 1-2 jalapeño peppers, seeded and roughly chopped
  • 1/4 cup loosely packed fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt, or to taste
  • Pinch of cayenne pepper (optional)

Instructions:

  1. In a food processor or blender, pulse the tomatoes, onion, garlic, jalapeño, and cilantro until coarsely chopped.
  2. Pour the mixture into a medium saucepan. Add the lime juice, cumin, sugar, salt, and cayenne pepper (if using).
  3. Bring to a simmer over medium heat. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  4. Remove from heat and let cool completely. Transfer to an airtight container and chill in the refrigerator for at least 30 minutes before serving.
  5. Taste and adjust seasonings as needed (salt, lime juice, cumin).
