Ingredients:
- 2 (28 ounce) cans whole peeled tomatoes, undrained
- 1/2 medium white onion, roughly chopped
- 2 cloves garlic, roughly chopped
- 1-2 jalapeño peppers, seeded and roughly chopped
- 1/4 cup loosely packed fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon sugar
- 1/2 teaspoon salt, or to taste
- Pinch of cayenne pepper (optional)
Instructions:
- In a food processor or blender, pulse the tomatoes, onion, garlic, jalapeño, and cilantro until coarsely chopped.
- Pour the mixture into a medium saucepan. Add the lime juice, cumin, sugar, salt, and cayenne pepper (if using).
- Bring to a simmer over medium heat. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
- Remove from heat and let cool completely. Transfer to an airtight container and chill in the refrigerator for at least 30 minutes before serving.
- Taste and adjust seasonings as needed (salt, lime juice, cumin).
