Ingredients:
- 1 lb lean ground beef (90/10)
- 1 cup Trader Joe's Mexican Cauliflower Rice
- 1 cup marinara sauce
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large bell peppers
- 1 cup shredded mozzarella
- 1 tbsp olive oil
Instructions:
- Slice the tops off the bell peppers and remove the seeds and membranes.
- Rub the interior and exterior of the peppers with olive oil.
- Place the peppers upright in a 9x13 inch baking dish; slice a thin sliver off the bottom if they wobble.
- Heat a skillet over medium-high heat, add lean ground beef, and cook until mahogany-colored and no longer pink (about 5-7 minutes).
- Stir in garlic powder, smoked paprika, salt, and black pepper.
- Fold in the cauliflower rice and marinara sauce, stirring until the liquid has reduced and the mixture is thick.
- Preheat your oven to 425°F (218°C).
- Spoon the filling generously into each pepper, pressing down slightly to pack it in.
- Top each pepper with a handful of shredded mozzarella cheese.
- Bake for 15-20 minutes until the cheese is bubbling and browned and the pepper walls are slightly collapsed and charred.
