Ingredients:

  • 2 cups fresh pineapple, finely diced
  • 1 medium red bell pepper, finely diced
  • 1 small red onion, finely diced
  • 1-2 jalapeño peppers, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper (optional)

Instructions:

  1. Wash and peel the pineapple; remove the core and dice it finely.
  2. Finely dice the red bell pepper and red onion.
  3. Seed and mince the jalapeño peppers.
  4. Chop the cilantro.
  5. In a large mixing bowl, combine the diced pineapple, bell pepper, red onion, jalapeños, and cilantro.
  6. Squeeze fresh lime juice over the mixture and sprinkle with salt and black pepper (if using).
  7. Gently toss to combine until evenly mixed.
  8. Cover with plastic wrap or a lid, and refrigerate for at least 30 minutes.
  9. Before serving, give the salsa a gentle stir and taste, adjusting seasoning as needed. Serve chilled.
