Ingredients:
- 1.5 lb boneless, skinless chicken breasts or thighs (4 pieces)
- 1 oz packet Ranch Seasoning Mix (Hidden Valley or generic)
- 4 oz cream cheese, softened and cubed
- 1/4 cup heavy cream
- 1/2 cup shredded Cheddar/Monterey Jack cheese blend
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Pat the chicken pieces dry. Rub the entire packet of ranch seasoning mix directly onto all surfaces of the chicken pieces.
- Place the seasoned chicken in the prepared baking dish. Scatter the softened, cubed cream cheese evenly around and on top of the chicken pieces.
- Drizzle the heavy cream over the chicken and cream cheese mixture.
- Bake for 15 minutes. Remove the dish from the oven, stir the melting cream cheese and cream gently to combine it into a thick sauce, ensuring the chicken is coated.
- Sprinkle the shredded Cheddar/Monterey Jack cheese blend over the top of the chicken and sauce. Return to the oven and bake for an additional 5 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the cheese is melted and bubbly.
- Let rest for 5 minutes before slicing and serving.
