Ingredients:

  • 1.5 lb boneless, skinless chicken breasts or thighs (4 pieces)
  • 1 oz packet Ranch Seasoning Mix (Hidden Valley or generic)
  • 4 oz cream cheese, softened and cubed
  • 1/4 cup heavy cream
  • 1/2 cup shredded Cheddar/Monterey Jack cheese blend
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Pat the chicken pieces dry. Rub the entire packet of ranch seasoning mix directly onto all surfaces of the chicken pieces.
  3. Place the seasoned chicken in the prepared baking dish. Scatter the softened, cubed cream cheese evenly around and on top of the chicken pieces.
  4. Drizzle the heavy cream over the chicken and cream cheese mixture.
  5. Bake for 15 minutes. Remove the dish from the oven, stir the melting cream cheese and cream gently to combine it into a thick sauce, ensuring the chicken is coated.
  6. Sprinkle the shredded Cheddar/Monterey Jack cheese blend over the top of the chicken and sauce. Return to the oven and bake for an additional 5 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the cheese is melted and bubbly.
  7. Let rest for 5 minutes before slicing and serving.
