Ingredients:

  • 8 oz (225 g) Tortilla Chips
  • 2 cups (200 g) Cheddar Cheese, shredded
  • 1 cup (100 g) Monterey Jack Cheese, shredded
  • 1 cup (about 150 g) Cooked Ground Beef or Chicken, seasoned with taco spices
  • 1 cup (240 g) Black Beans, rinsed and drained
  • 1/4 cup (35 g) Jalapeños, sliced (fresh or pickled)
  • Sour Cream, for drizzling
  • 1/4 cup (15 g) Chopped Fresh Cilantro, for garnish
  • Salsa or Pico de Gallo, for serving, optional
  • 1 Ripe Avocado, mashed (for Easy Guacamole, optional)
  • Juice of 1 Lime (for Easy Guacamole, optional)
  • Salt, to taste (for Easy Guacamole, optional)
  • 1 Diced Tomato (for Easy Guacamole, optional)
  • 1/4 cup (40 g) Chopped Red Onion (for Easy Guacamole, optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Line the baking sheet with parchment paper for easy cleanup, if desired.
  3. Spread tortilla chips evenly over the baking sheet.
  4. Evenly distribute the cooked ground meat and black beans over the chips.
  5. Sprinkle shredded cheddar and Monterey Jack cheese generously on top.
  6. Scatter sliced jalapeños across the nachos.
  7. Place in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  8. While nachos are baking, combine mashed avocado with lime juice, salt, and optional ingredients in a mixing bowl.
  9. Remove nachos from the oven, drizzle with sour cream, and top with cilantro.
  10. Serve hot with guacamole and salsa on the side.
