Ingredients:
- 1 cup (200g) granulated white sugar
- 1 cup (240ml) water
- 1/4 tsp (1.5g) fine sea salt
- 2 tbsp (30ml) vanilla extract
Instructions:
- Combine the sugar, water, and salt in a small saucepan.
- Place the pan over medium heat. Whisk gently and constantly until the sugar has completely dissolved and the liquid is clear, ensuring it reaches a gentle simmer but not a rolling boil.
- Remove the pan from the heat immediately.
- Stir in the vanilla extract.
- If using a vanilla bean instead of extract, stir in the seeds and pod and let the syrup steep in the pan for 10 minutes as it cools.
- Pour the syrup through a fine-mesh strainer into a glass storage bottle or mason jar.
- Allow the syrup to cool completely to room temperature before sealing the lid to prevent condensation.
