Ingredients:
- 4 cups mixed greens (e.g., arugula, spinach, romaine) (120g)
- 1 cup cucumber, diced (150g)
- 1 cup cherry tomatoes, halved (150g)
- 1 cup radishes, thinly sliced (120g)
- 1 avocado, diced (200g)
- ½ cup fresh herbs (e.g., basil, parsley, chives) (15g)
- ½ cup Greek yogurt (120g)
- ¼ cup mayonnaise (60g)
- 2 tablespoons lemon juice (30ml)
- 2 teaspoons Dijon mustard (10g)
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Rinse and dry the mixed greens.
- Dice the cucumber, halve the cherry tomatoes, slice the radishes, and dice the avocado.
- Finely chop the fresh herbs.
- In a medium bowl, combine Greek yogurt, mayonnaise, lemon juice, Dijon mustard, and minced garlic.
- Whisk until smooth.
- Season with salt and pepper to taste.
- In a large bowl, combine all the vegetables and herbs.
- Drizzle the dressing over the salad.
- Toss gently to coat all ingredients evenly.
- Serve immediately or chill for 10 minutes before serving.
