Ingredients:

  • 4 cups mixed greens (e.g., arugula, spinach, romaine) (120g)
  • 1 cup cucumber, diced (150g)
  • 1 cup cherry tomatoes, halved (150g)
  • 1 cup radishes, thinly sliced (120g)
  • 1 avocado, diced (200g)
  • ½ cup fresh herbs (e.g., basil, parsley, chives) (15g)
  • ½ cup Greek yogurt (120g)
  • ¼ cup mayonnaise (60g)
  • 2 tablespoons lemon juice (30ml)
  • 2 teaspoons Dijon mustard (10g)
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Rinse and dry the mixed greens.
  2. Dice the cucumber, halve the cherry tomatoes, slice the radishes, and dice the avocado.
  3. Finely chop the fresh herbs.
  4. In a medium bowl, combine Greek yogurt, mayonnaise, lemon juice, Dijon mustard, and minced garlic.
  5. Whisk until smooth.
  6. Season with salt and pepper to taste.
  7. In a large bowl, combine all the vegetables and herbs.
  8. Drizzle the dressing over the salad.
  9. Toss gently to coat all ingredients evenly.
  10. Serve immediately or chill for 10 minutes before serving.
