Ingredients:

  • 4 slices whole grain bread (or your choice of bread)
  • 1 cup hummus (about 240g)
  • 1 cup roasted red peppers, sliced (about 150g)
  • 1 cup fresh spinach or arugula (about 30g)
  • ½ cup sliced cucumbers (about 75g)
  • ¼ cup Kalamata olives, pitted and sliced (about 35g)
  • 1 tablespoon olive oil (optional, for drizzling)
  • Salt and pepper to taste

Instructions:

  1. Lightly toast the whole grain bread if desired.
  2. Generously spread ½ cup of hummus on each slice of bread.
  3. Top two slices of hummus-covered bread with roasted red peppers, spinach, and sliced cucumbers.
  4. Scatter the sliced Kalamata olives over the vegetables.
  5. Drizzle with olive oil (if using) and season with salt and pepper.
  6. Place the remaining slices of hummus-covered bread on top to finish the sandwich.
  7. Cut the sandwiches in half and serve immediately.
