Ingredients:
- 4 slices whole grain bread (or your choice of bread)
- 1 cup hummus (about 240g)
- 1 cup roasted red peppers, sliced (about 150g)
- 1 cup fresh spinach or arugula (about 30g)
- ½ cup sliced cucumbers (about 75g)
- ¼ cup Kalamata olives, pitted and sliced (about 35g)
- 1 tablespoon olive oil (optional, for drizzling)
- Salt and pepper to taste
Instructions:
- Lightly toast the whole grain bread if desired.
- Generously spread ½ cup of hummus on each slice of bread.
- Top two slices of hummus-covered bread with roasted red peppers, spinach, and sliced cucumbers.
- Scatter the sliced Kalamata olives over the vegetables.
- Drizzle with olive oil (if using) and season with salt and pepper.
- Place the remaining slices of hummus-covered bread on top to finish the sandwich.
- Cut the sandwiches in half and serve immediately.
