Ingredients:

  • 2 medium watermelon radishes, thinly sliced
  • 1 cup cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, roughly chopped
  • ¼ cup fresh orange juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions:

  1. Thinly slice watermelon radishes using a sharp knife or mandoline. Slice cucumber, halve cherry tomatoes, and thinly slice red onion.
  2. In a mixing bowl, whisk together fresh orange juice, olive oil, apple cider vinegar, and honey. Season with salt and pepper to taste.
  3. In a large bowl, combine sliced radishes, cucumber, cherry tomatoes, red onion, and cilantro.
  4. Pour the citrus vinaigrette over the salad and toss gently to combine.
  5. Transfer to a serving bowl and enjoy immediately, or let it chill for 10 minutes for flavors to meld.
