Ingredients:

  • 4 cups (600g) cubed watermelon, chilled, seeds removed
  • 1/2 cup (120ml) water or coconut water
  • Juice of 1/2 lime (about 1 tablespoon/15ml)
  • 5-6 fresh mint leaves
  • Optional: 1 tablespoon (15ml) honey or maple syrup
  • Optional: 1/2 cup ice cubes

Instructions:

  1. Chop the watermelon into cubes, remove any seeds. Pick mint leaves.
  2. Add watermelon, water (or coconut water), lime juice, and mint leaves to the blender.
  3. Add honey or maple syrup to taste, if desired.
  4. Add ice cubes for a thicker, colder smoothie if using fresh (unfrozen) watermelon.
  5. Blend until all ingredients are completely smooth and there are no chunks.
  6. Taste the smoothie and adjust sweetness or lime juice as needed.
  7. Pour into glasses and serve immediately. Garnish with a sprig of mint, if desired.
