Ingredients:
- 8 oz Feta Cheese (full-fat block style), drained
- 1 cup Roasted Red Peppers, drained
- 2 Tablespoons Plain Greek Yogurt (Full Fat)
- 2 Tablespoons Extra Virgin Olive Oil, plus extra for drizzling
- 1 Tablespoon Fresh Lemon Juice
- 1 small Garlic Clove, peeled
- 1/2 teaspoon Smoked Paprika
- 1/4 teaspoon Red Pepper Flakes (or to taste)
- Freshly ground Black Pepper, to taste
Instructions:
- Drain the feta well. Place the drained roasted red peppers on a paper towel to remove surface moisture.
- Place the feta, drained roasted peppers, Greek yogurt, olive oil, lemon juice, garlic clove, smoked paprika, and red pepper flakes into the bowl of a food processor.
- Pulse a few times, then process continuously. Scrape down the sides of the bowl as necessary.
- Blend until the mixture is completely smooth and creamy, which should take about 2–3 minutes.
- Taste for seasoning. Add freshly ground black pepper if desired, but avoid adding extra salt until you are certain it is needed.
- Transfer the dip to a serving bowl. Cover and chill in the refrigerator for at least 20 minutes to allow the flavors to meld beautifully.
- Before serving, drizzle generously with a good quality olive oil and sprinkle with an extra pinch of smoked paprika.
