Ingredients:

  • 8 oz Feta Cheese (full-fat block style), drained
  • 1 cup Roasted Red Peppers, drained
  • 2 Tablespoons Plain Greek Yogurt (Full Fat)
  • 2 Tablespoons Extra Virgin Olive Oil, plus extra for drizzling
  • 1 Tablespoon Fresh Lemon Juice
  • 1 small Garlic Clove, peeled
  • 1/2 teaspoon Smoked Paprika
  • 1/4 teaspoon Red Pepper Flakes (or to taste)
  • Freshly ground Black Pepper, to taste

Instructions:

  1. Drain the feta well. Place the drained roasted red peppers on a paper towel to remove surface moisture.
  2. Place the feta, drained roasted peppers, Greek yogurt, olive oil, lemon juice, garlic clove, smoked paprika, and red pepper flakes into the bowl of a food processor.
  3. Pulse a few times, then process continuously. Scrape down the sides of the bowl as necessary.
  4. Blend until the mixture is completely smooth and creamy, which should take about 2–3 minutes.
  5. Taste for seasoning. Add freshly ground black pepper if desired, but avoid adding extra salt until you are certain it is needed.
  6. Transfer the dip to a serving bowl. Cover and chill in the refrigerator for at least 20 minutes to allow the flavors to meld beautifully.
  7. Before serving, drizzle generously with a good quality olive oil and sprinkle with an extra pinch of smoked paprika.
