Ingredients:

  • 1 (15 oz / 425 g) can black beans, drained and rinsed
  • 1 (15 oz / 425 g) can corn, drained or 1.5 cups fresh corn
  • 1 medium red bell pepper, diced
  • 1 medium red onion, finely chopped
  • 1-2 jalapeño peppers, seeded and minced (adjust to taste)
  • 1/4 cup (60 ml) fresh lime juice (about 2 limes)
  • 1/4 cup (60 ml) fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  1. Drain and rinse black beans; set aside. Drain corn if using canned; set aside. Dice the red bell pepper, chop the red onion, and mince the jalapeños. Chop the cilantro.
  2. In a medium mixing bowl, combine the black beans, corn, red bell pepper, red onion, and jalapeños.
  3. Drizzle lime juice over the mixture. Add chopped cilantro, ground cumin, salt, and pepper.
  4. Gently toss the ingredients until well combined. Taste and adjust seasoning, adding more salt, lime juice, or jalapeño if desired.
  5. Serve immediately or cover and chill for at least 30 minutes to let flavors meld.
