Ingredients:
- 1 (15 oz / 425 g) can black beans, drained and rinsed
- 1 (15 oz / 425 g) can corn, drained or 1.5 cups fresh corn
- 1 medium red bell pepper, diced
- 1 medium red onion, finely chopped
- 1-2 jalapeño peppers, seeded and minced (adjust to taste)
- 1/4 cup (60 ml) fresh lime juice (about 2 limes)
- 1/4 cup (60 ml) fresh cilantro, chopped
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
- Drain and rinse black beans; set aside. Drain corn if using canned; set aside. Dice the red bell pepper, chop the red onion, and mince the jalapeños. Chop the cilantro.
- In a medium mixing bowl, combine the black beans, corn, red bell pepper, red onion, and jalapeños.
- Drizzle lime juice over the mixture. Add chopped cilantro, ground cumin, salt, and pepper.
- Gently toss the ingredients until well combined. Taste and adjust seasoning, adding more salt, lime juice, or jalapeño if desired.
- Serve immediately or cover and chill for at least 30 minutes to let flavors meld.
