Ingredients:
- 1 cup fresh parsley, finely chopped (about 30g)
- 1/2 cup fresh cilantro, finely chopped (about 15g, optional)
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 tablespoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil (120ml)
- 2 tablespoons red wine vinegar (30ml)
- Juice of 1 lemon (about 30ml)
Instructions:
- Finely chop the fresh parsley and cilantro (if using). Mince the garlic cloves.
- In a mixing bowl, combine chopped herbs, garlic, red pepper flakes, oregano, salt, and black pepper.
- Gradually whisk in the olive oil, red wine vinegar, and lemon juice until the mixture is well combined.
- Taste the seasoning and adjust the salt, acidity, or heat to your preference.
- Transfer to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.
- Use your chimichurri seasoning to enhance grilled meats, vegetables, or as a marinade.
