Ingredients:

  • 1 cup fresh parsley, finely chopped (about 30g)
  • 1/2 cup fresh cilantro, finely chopped (about 15g, optional)
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup olive oil (120ml)
  • 2 tablespoons red wine vinegar (30ml)
  • Juice of 1 lemon (about 30ml)

Instructions:

  1. Finely chop the fresh parsley and cilantro (if using). Mince the garlic cloves.
  2. In a mixing bowl, combine chopped herbs, garlic, red pepper flakes, oregano, salt, and black pepper.
  3. Gradually whisk in the olive oil, red wine vinegar, and lemon juice until the mixture is well combined.
  4. Taste the seasoning and adjust the salt, acidity, or heat to your preference.
  5. Transfer to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Use your chimichurri seasoning to enhance grilled meats, vegetables, or as a marinade.
